Mango Habanero x Black Orange
Bitter orange is one of the few flavours that can stand next to habanero without either one backing down. This longdrink puts them in the same glass and lets them get on with it.
ORGANICS Black Orange is dry and properly bitter, closer to an orange soda made for adults than to anything sweet. Against it, the mango in the Mango Habanero liqueur reads as fruit rather than sugar, and the habanero threads through the bitterness instead of sitting on top of it. The finish is long and slightly dry, which is unusual for a drink this easy to make.
Highball, ice to the rim, liqueur first, then top with the chilled soda and stir once. Garnish with an orange slice — and if you have rosemary, bruise a sprig between your fingers before dropping it in; the resin plays directly into the bitterness. Good as an aperitif before something rich, and it holds up to food better than most sweet longdrinks.
